Deviled Eggs With Ham

- 4 eggs
- cold water
- 1/4 c. mayonnaise
- 1 tsp. Dijon-style mustard
- dash of white pepper
- 1 Tbsp. drained capers, rinsed
- 1/4 c. finely chopped baked ham or Prosciutto
- slivered leaf lettuce for garnish
Directions

1Place eggs in 2 quart saucepan.

2Cover with water.

3Bring to boiling.

4Reduce heat and simmer 12 minutes.

5Rinse well with cold water.

6Fill pan with more cold water and allow eggs to stand about 30 minutes until cooled.

7Crack and carefully remove shells.

8Cut eggs in halves lengthwise.

9Scoop yolks into a bowl.

10Mash, removing and reserving about 2 teaspoons for garnish.

11Mix mashed egg yolks smoothly with mayonnaise, mustard and pepper.

12Fold in capers and ham, reserving about 2 teaspoons of the ham for garnish.

13Mount egg yolk mixture in egg whites.

14Sprinkle with reserved egg yolk and ham.
