Deviled Potato Salad

Ingredients

  • 2 1/2 lb all purpose potatoes, peeled and diced
  • 1/4 medium onion
  • 3 tablespoons prepared yellow mustard
  • 1/2 cup mayonnaise
  • 1 teaspoon sweet paprika
  • 1 tablespoon cayenne pepper sauce
  • salt and pepper to taste
  • 2 scallions, thinly sliced

Directions

    Boil potatoes in water that has been seasoned with salt until tender.

    Drain and return to pot.

    Let stand 2 minutes and then spread then out on a cookie sheet to cool quickly.

    In a mixing bowl, grate onion.

    Add mustard, mayonnaise, paprika and cayenne pepper sauce to the bowl.

    Stir and combine well.

    Add in the potatoes and toss to coat.

    Top with scallions.

    Serve.
