  • 2 tbsp. butter
  • 1 teaspoon powdered sugar
  • 1 teaspoon mustard
  • 1 saltspoon salt
  • 1/4 saltspoon pepper
  • 1 hard boiled egg
  • 1 1/2 tbsp. warm vinegar
  • 3 tomatoes, skins removed

Directions

    Cream butter, add in powdered sugar, mustard, salt and pepper.

    Mash the yolk of a hard boiled egg.

    Add in 1 raw egg, beaten slightly and 1 1/2 Tbsp.

    warm vinegar; cook till it thickens.

    Remove the skins from 3 tomatoes, cut thin into thick slices.

    Season with salt and pepper, dredge with flour and fry in butter.

    Pour the sauce over the tomatoes and serve.

    Hard canned tomatoes can be used if more convenient.
