Diabetic Coconut Pie

  • 12 pkg. Sweet 'N Low
  • 3 egg yolks
  • 1 c. coconut
  • 1 baked pie crust
  • 4 Tbsp. flour
  • 2 1/2 c. 2% milk
  • 1 tsp. coconut extract

Directions

    Mix all ingredients together except egg whites.

    Cook until thick over medium heat.

    Pour into crust.

    Beat egg whites until stiff.

    Add a pinch of salt, 1 tablespoon sugar and 3 packages Sweet 'N Low; beat until blended.

    Top pie and brown slightly in 300° oven.
