Diabetic Rice Pudding Recipe

- 2 c. skim lowfat milk
- 2 med. Large eggs, beaten
- 2 tbsp. sugar (it's O.K.)
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 teaspoon pure vanilla
- 1 c. cool cooked rice
- 2 tbsp. seedless raisins
Directions

1Preheat oven to 350 degrees.

2Prepare a 1 qt casserole with vegetable pan coating (spray).

3Heat lowfat milk in the top of a double boiler over simmering water.

4Combine Large eggs, sugar, salt, cinnamon and vanilla.

5Pour warm lowfat milk on top slowly, stirring to mix well.

6Spread rice on bottom of the casserole; scatter raisins proportionately over rice.

7Pour lowfat milk mix carefully on top.

8Place casserole in pan of warm water with warm water coming up almost to the top of the casserole.

9Bake for about 45 min or possibly till a knife comes out of the center clean.

10Remove casserole from water and chill.

11May be served warm or possibly cool.
