- 2 12 cups milk
- 1 tablespoon unsalted butter
- 2 cups diced russet potatoes
- 23 cup freshly grated parmesan cheese
- 1 tablespoon chopped fresh thyme
- 12 teaspoon salt
- 12 teaspoon black pepper
Directions

1In saucepan, bring milk and butter to a simmer over medium heat.

2Stir in potatoes, reduce heat and simmer until potatoes are tender, about 20 minutes.

3Remove from heat.

4Preheat broiler.

5Stir in Parmesan, thyme, salt and pepper.

6Spoon into ramekins, dividing equally.

7Place ramekins on a baking sheet and broil until tops are golden brown, 2-3 minutes.
