  • 2 12 cups milk
  • 1 tablespoon unsalted butter
  • 2 cups diced russet potatoes
  • 23 cup freshly grated parmesan cheese
  • 1 tablespoon chopped fresh thyme
  • 12 teaspoon salt
  • 12 teaspoon black pepper

Directions

    In saucepan, bring milk and butter to a simmer over medium heat.

    Stir in potatoes, reduce heat and simmer until potatoes are tender, about 20 minutes.

    Remove from heat.

    Preheat broiler.

    Stir in Parmesan, thyme, salt and pepper.

    Spoon into ramekins, dividing equally.

    Place ramekins on a baking sheet and broil until tops are golden brown, 2-3 minutes.
