- 1 graham cracker pie shell
- 2 Tbsp. lemon juice
- 2 egg yolks
- 1 envelope unflavored gelatin
- 1/4 c. hot skim milk
- 1/3 c. sugar (can use 4 Sweet 'N Low)
- 2 c. cottage cheese (1 lb.)
Directions

1Use blender and combine lemon juice, yolks and gelatin on low. Pour in milk and sugar; blend for one minute on high.

2Add cheese by spoonful, blending until smooth.

3Pour into graham cracker shell and refrigerate.

4Use fresh fruit on top to decorate.
