- 4 chicken breasts
- 1 bag fresh spinach leaves
- 12 lb mushroom, sliced thinly
- 14 lb monterey jack cheese
- 1 cup sour cream
- 3 tablespoons Dijon mustard
Directions

1Boil chicken breasts until thoroughly cooked, do not overcook and dry out chicken.

2Coat baking dish with non-stick cooking spray.

3Place chicken breast in pan.

4Place about 5 leaves of spinach on each piece of chicken breast until entire breast is coated with spinach.

5Place sliced mushrooms on top of spinach.

6Slice monterey jack cheese and put two slices on top of mushrooms.

7Bake at 350 degrees for approximately 20 minutes.

8In saucepan, mix together sour cream and dijon mustard.

9Cook on medium heat stirring so that it does not burn.

10Do not let boil.

11When thoroughly heated, pour mixture on chicken right before serving.
