Dill Roasted Salmon Salad Kit

  • FOR THE SALAD:
  • 2/3 pounds Salmon Filet
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Onion Powder
  • 1/2 teaspoons Garlic Powder
  • 1/2 teaspoons Dried Dill
  • 2 cups Orzo Pasta, Cooked
  • Olive Oil, As Needed
  • 8 ounces, weight Romaine Lettuce, Chopped
  • 1 cup Sliced Cucumber
  • 1 cup Cherry Tomatoes, Halved
  • 1/2 cups Crumbled Feta Cheese
  • FOR THE DRESSING:
  • 1 whole Lemon, Juiced
  • 1 whole Lime, Juiced
  • 1 Tablespoon Honey
  • 1/2 cups Olive Oil
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper

Directions

    Preheat oven to 350°F. Place salmon on a baking sheet and sprinkle with salt, onion powder, garlic powder, and dill. Roast salmon for 25 minutes, then remove from oven to cool slightly.

    While salmon cools, toss cooked orzo with a few drizzles of olive oil and some salt and pepper. Taste, and add more salt and pepper until orzo is very flavorful.

    Whisk all dressing ingredients together and taste. Add more salt and pepper to your preference.

    When salmon has cooled, remove skin and cut into large chunks.

    To pack to go, package salmon, orzo, dressing, veggies, and cheese in separate plastic containers and bags.

    To serve, assemble salads with a bed of lettuce, some orzo and salmon, and veggies and feta. Drizzle with the dressing and serve.

    Note: I like to package this with a few extras as a gift: some dessert, a loaf of bread, bottle of wine, etc. It's a great gift or a make-ahead meal to make on a Sunday and eat throughout the week!
