- 1 Tbsp. oil
- 1 large onion, chopped
- 1 c. Kasha
- 2 c. water
- 2 tsp. salt
- 1 lb. fresh spinach or 2 boxes frozen
- 1 c. unsalted peanuts
- 2 eggs
- 1/4 tsp. pepper or 1/2 tsp. Tabasco
Directions

1Heat oil in large skillet; saute onion and Kasha until onion is transparent.

2Add water and 1/2 teaspoon salt.

3Bring to boil; cover and reduce heat.

4Cook about 15 minutes, until water is absorbed.

5Cook spinach and put spinach, peanuts and one egg in blender and process on high until creamed (nuts should be coarse). Lightly beat one egg; add spinach mixture, Kasha, salt and pepper. Put into well oiled 9 x 5 x 3-inch pan.

6Bake 55 minutes at 350°. Cool 5 to 10 minutes.
