Dinner Salmon Omelet

  • 1 can salmon (7 3/4 oz.)
  • 1 small zucchini, shredded
  • 1/2 c. chopped onion
  • 1/4 c. butter
  • 4 eggs
  • 2 Tbsp. water
  • 1/2 tsp. dill weed (optional)
  • dairy sour cream

Directions

    Drain salmon; saute zucchini and onion in 1 tablespoon butter. Remove from skillet.

    Beat eggs, water and dill weed.

    Add butter as needed in skillet to cook omelet.

    When done, spoon on vegetables and salmon.

    Fold in half.

    Serve with sour cream as topping.
