Ingredients

  • 1 lb. chicken livers, chopped
  • 1 lb. bulk sausage (mild or hot)
  • 1/4 c. margarine
  • 1 c. chopped onion
  • 1 c. celery, chopped
  • 1 bunch green onions, chopped
  • 2 Tbsp. chopped parsley
  • 2 cloves garlic, minced
  • 1/2 tsp. thyme
  • 1/2 tsp. basil or more to taste
  • 3 c. cooked rice (Uncle Ben's)
  • salt and pepper to taste
  • 1 can chicken broth
  • 1/2 green pepper, chopped

Directions

    Saute chicken livers and sausage until browned.

    Remove from skillet and set aside.

    Melt butter in skillet.

    Add onion, celery, green onion, parsley, garlic and bell pepper.

    Saute until tender.

    Add thyme, basil, chicken livers and sausage.

    Mix well. Stir in salt, pepper and chicken broth.

    Cook rice according to package directions and add to sausage mixture.

    Heat on medium heat, stirring constantly.
