  • 1/4 c. oil
  • 3 Tbsp. flour
  • 2 onions, chopped
  • 1 c. celery, chopped
  • 1 bell pepper, chopped
  • 1 clove garlic, chopped
  • 1 lb. ground round
  • 2 pkg. gizzards, chopped
  • 1 can beef broth
  • 2 c. cooked rice
  • dash red pepper
  • garlic salt to taste
  • 1/2 tsp. Tony's Chachere seasoning
  • salt and pepper to taste
  • 1/2 c. green onions, chopped

Directions

    Make dark roux with oil and flour.

    Add onions, celery, bell pepper, and garlic clove.

    Cook 15 minutes; add meat and gizzards and brown.

    Add beef broth and seasonings; cook 30 minutes.

    Add rice and green onions; stir and cook for 10 minutes.
