- 2 c. cooked rice
- 2 lb. chicken giblets or ground steak
- 2 Tbsp. flour
- 1 c. chopped celery
- 1 garlic clove, minced
- salt and pepper
- 1/3 c. cooking oil
- 1/4 c. chopped green onion tops
- 1 pt. chicken broth
- 1/4 c. chopped parsley
- 1 c. chopped onions
Directions

1Make roux by heating the oil, then add flour and stir

2until dark.

3Add onions, celery and garlic.

4Cook until withered. Add finely chopped or ground giblets or round steak.

5If using steak, stir until red disappears. Add all other ingredients and chicken broth.

6Cook over very low heat, covered, until the mixture is consistent in thick gravy. Add cooked rice, salt and pepper to taste.
