Ingredients

  • 2 c. cooked rice
  • 2 lb. chicken giblets or ground steak
  • 2 Tbsp. flour
  • 1 c. chopped celery
  • 1 garlic clove, minced
  • salt and pepper
  • 1/3 c. cooking oil
  • 1/4 c. chopped green onion tops
  • 1 pt. chicken broth
  • 1/4 c. chopped parsley
  • 1 c. chopped onions

Directions

    Make roux by heating the oil, then add flour and stir

    until dark.

    Add onions, celery and garlic.

    Cook until withered. Add finely chopped or ground giblets or round steak.

    If using steak, stir until red disappears. Add all other ingredients and chicken broth.

    Cook over very low heat, covered, until the mixture is consistent in thick gravy. Add cooked rice, salt and pepper to taste.
