Ingredients

  • 2 c. chopped sweet red pepper
  • 2 c. chopped sweet green pepper
  • 1 qt. chopped cabbage
  • 2 c. chopped cucumbers
  • 2 c. chopped onions
  • 1/4 c. salt
  • 2 qts. cold water
  • 3/4 c. sugar
  • 3 Tbsp. mustard seed
  • 2 Tbsp. celer seed
  • pickling spice
  • 1 qt. vinegar

Directions

    Dissolve salt in 2 qts. cold water.

    Pour over chopped vegetables and let stand for 1 hour.

    Drain.

    Comnbine sugar, vinegar and spices.

    Add vegetables and simmer about 20 minutes. Bring to a boil.

    Pack boiling hot into jars leaving 1/2 inch head space.

    Adjust lids.

    Process 15 minutes in a boiling water bath. Makes 5-6 pints.
