  • 1 lb. chicken cutlet filets
  • 1 c. bread crumbs
  • 1 tsp. oregano
  • 1/4 c. grated Parmesan cheese
  • 1 tsp. garlic powder
  • 1 tsp. Italian seasonings
  • 2 eggs, beaten
  • 1 c. chopped mushrooms
  • 1 small jar marinated artichoke hearts
  • 2 Tbsp. butter
  • 3 Tbsp. olive oil

Directions

    Combine bread crumbs, Parmesan cheese, oregano, garlic powder and Italian seasonings.

    Heat olive oil in a 9-inch skillet.

    Cut chicken into small pieces (nugget size).

    Dip chicken in egg, then in bread crumb mixture.

    Fry in olive oil.

    Remove from oil and pat dry to get rid of excess oil.
