- 1 lb. chicken cutlet filets
- 1 c. bread crumbs
- 1 tsp. oregano
- 1/4 c. grated Parmesan cheese
- 1 tsp. garlic powder
- 1 tsp. Italian seasonings
- 2 eggs, beaten
- 1 c. chopped mushrooms
- 1 small jar marinated artichoke hearts
- 2 Tbsp. butter
- 3 Tbsp. olive oil
Directions

1Combine bread crumbs, Parmesan cheese, oregano, garlic powder and Italian seasonings.

2Heat olive oil in a 9-inch skillet.

3Cut chicken into small pieces (nugget size).

4Dip chicken in egg, then in bread crumb mixture.

5Fry in olive oil.

6Remove from oil and pat dry to get rid of excess oil.
