- 1 cup all-purpose flour
- 1 cup cornmeal
- 14 cup sugar
- 1 tablespoon baking powder
- 12 teaspoon salt
- 2 eggs, lightly beaten
- 23 cup unsweetened applesauce
- 12 cup milk
- 14 cup canola oil
- 1 large apple, peeled and finely chopped
Directions

1Stir together the flour, cornmeal, sugar, baking powder and salt; set aside.

2Combine the eggs, applesauce, milk and oil; stir into dry ingredients, just until moistened.

3Add apple.

4Spoon into greased muffin pans, filling 2/3 full.

5Bake at 425F for 15 minutes.

6Cool muffins five minutes in pan before serving.
