  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 14 cup sugar
  • 1 tablespoon baking powder
  • 12 teaspoon salt
  • 2 eggs, lightly beaten
  • 23 cup unsweetened applesauce
  • 12 cup milk
  • 14 cup canola oil
  • 1 large apple, peeled and finely chopped

Directions

    Stir together the flour, cornmeal, sugar, baking powder and salt; set aside.

    Combine the eggs, applesauce, milk and oil; stir into dry ingredients, just until moistened.

    Add apple.

    Spoon into greased muffin pans, filling 2/3 full.

    Bake at 425F for 15 minutes.

    Cool muffins five minutes in pan before serving.
