Ingredients

  • 1 1/3 cup flour of your choice
  • 1/2 tsp xanthum gum (if using gluten free flour)
  • 1 cup oats, uncooked
  • 1/3 cup firmly packed brown sugar
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2/3 cup milk of your choice
  • 1/3 cup apple juice
  • 1/4 cup vegetable oil
  • 1 egg, beaten (or equivalent amount in egg substitute)
  • 1 apple, peeled & chopped

Directions

    Heat oven to 400 degrees.

    Grease muffin tin or line with baking cups.

    Combine dry ingredients in large bowl.

    Add remaining ingredients, except apple, mixing just until moistened.

    Gently fold in apples.

    Fill prepared muffin cups 2/3 full.

    Bake 20-22 minutes or until golden brown.
