Double Quick Dinner Rolls

Ingredients

  • 1 pkg. active dry yeast
  • 1 c. warm water
  • 2 Tbsp. sugar
  • 2 1/4 c. sifted flour
  • 1 tsp. salt
  • 1 egg
  • 2 Tbsp. soft shortening

Directions

    Dissolve yeast in water; stir in sugar, half of flour and salt.

    Beat with a spoon until smooth.

    Scrape down sides of bowl; cover with cloth.

    Let rise about 30 minutes, until double in bulk.

    Grease 12 large muffin cups.

    Stir down raised dough. Spoon into muffin cups, 1/2 full.

    Let rise for 20 to 30 minutes or until dough reaches tops of muffin cups.

    Bake in 400° oven for 15 to 20 minutes.

    Yields 12 rolls.
