- 4 c. sifted flour
- 4 tsp. baking powder
- 1 tsp. salt
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/8 tsp. mace
- 1 c. sugar
- 4 Tbsp. table fat
- 2 eggs
- 1 c. milk
- shortening (for deep fat frying)
Directions

1Sift flour, baking powder and salt together.

2Blend fat and spices in a large bowl.

3Add sugar mixture, 1/4 cup at a time, creaming after each addition until fluffy.

4Beat eggs until thick; add to sugar mixture, blending thoroughly.

5Add flour mixture alternately with milk, in 3 additions, to sugar mixture, stirring after each addition until blended.

6Chill dough for 5 minutes. Use enough shortening to fill a deep heavy pan 1/2 to 2/3 way full when melted; heat to 370°.

7Put dough on lightly floured board and shape into ball.

8Roll dough to 1/3-inch thick; cut with floured cutter.

9Lift doughnuts with wide spatula and place in heated oil, 3 or 4 in oil at a time MAX.

10Cook doughnuts until golden brown, turning once.

11Drain on absorbent paper (paper towels).
