  • 5 medium-sized potatoes, cooked and mashed (about 1 1/2 c.)
  • 1 1/2 c. sugar
  • 3 Tbsp. melted butter
  • 4 tsp. baking powder
  • 2 eggs
  • 1 scant c. milk
  • 5 c. flour (about, no more)

Directions

    Beat potatoes with butter, eggs and milk.

    Sift dry ingredients and add to liquid.

    Dough should be soft yet firm enough to roll.

    Cut with doughnut cutter.

    Fry at 375° until golden brown on both sides.

    Makes about 5 dozen doughnuts and holes.
