Dove Casserole

  • 10 to 12 doves
  • 3 chopped onions
  • red and black pepper to taste
  • salt to taste
  • 2 medium onions
  • 1 c. rice
  • 2 cans onion soup
  • 2 small cans mushrooms
  • 1 (4 oz.) jar pimento

Directions

    Cover the first 4 ingredients with water.

    Boil until doves are tender.

    Debone doves and set aside.

    Brown 2 medium finely chopped onions in 1 stick butter.

    Add 1 cup uncooked rice and brown.

    Mix 2 cans of onion soup, 2 small cans mushrooms, 1 small (4 ounce) jar pimento and deboned doves.

    Add this mixture to browned rice and place in casserole.

    Cover with foil.

    Bake 45 minutes at 400°. Turn off oven and let stand 10 minutes in oven.
