Ingredients

  • 36 dove breast, boned and diced
  • 1/2 lb. butter
  • 1 large purple onion, diced
  • lemon pepper to taste
  • 1-1/2 lbs. potatoes, diced
  • garlic salt to taste
  • 1 (16 oz.) jar salsa
  • 4 oz. can chili peppers, diced
  • 12 large flour tortillas
  • 1 lb. monterey jack cheese, shredded
  • green taco sauce

Directions

    In large skillet over medium heat, cook dove meat and onion in 1/2 the butter; season with lemon pepper.

    Cook for 10 minutes; set aside.

    In same skillet melt remaining butter and fry potatoes adding lemon pepper
  4. 4
    and garlic salt to taste.

    Place meat in with potatoes; adding salsa and chili peppers.

    Simmer 15 minutes; stirring frequently.

    Spoon into warm tortillas; cover with cheese and green taco sauce.

    Fold and serve.
