- 1/4 lb. bacon, chopped
- 2 cups fresh corn
- 1/2 lb. lima beans
- 1 md. green pepper, chopped
- 1 md. onion, chopped
- 2 md. tomatoes, cut into wedges
Directions

1In a skillet, cook bacon until crisp.

2Remove bacon to paper towels and drain all but 1 tb drippings.

3To skillet, add corn, beans, green pepper and onion.

4Simmer for 10 to 15 minutes or until vegetables are almost tender, adding water if necessary.

5Stir in tomatoes and bacon.

6Cook just until tomatoes are heated through.
