- 3 to 3 1/2 lb. chicken
- 1/3 c. soy sauce
- 2 Tbsp. dry sherry
- 2 tsp. minced fresh ginger
- 1/4 c. loose cinnamon-apple tea, about 12 to 14 bags
- 2 Tbsp. brown sugar, packed
Directions

1Rinse chicken, drain and dry well.

2Combine soy sauce, sherry and ginger.

3Pour over chicken in large plastic bag.

4Refrigerate 8 hours or overnight, turning occasionally.

5Combine tea and brown sugar; sprinkle evenly over foil lined pan.

6Place chicken breast side up on rack over tea mixture.

7Cover pan with foil.

8Bake at 350° for 1 hour.

9Discard foil.

10Increase to 400°.

11Bake 30 minutes or until tender.

12Let stand 10 minutes before carving.
