Dreamy Chicken Salad

Ingredients

  • 1 lb package boneless/skinless chicken breast (about 3 cups cooked chicken chunks)
  • 1 tsp ground pepper
  • 1/2 cup chopped pecans or walnuts
  • 2 tbsp crystallized ginger, finely minced (optional)
  • 1/3 cup mayonnaise regular or light
  • 1/3 cup buttermilk
  • 1/4 tsp salt (optional)
  • 1/4 tsp ground pepper
  • 2 tsp italian style seasoning (I use Tuscan Sunset by Penzeys)

Directions

    If using raw chicken, simmer in water with pepper for 20 minutes until cooked through, or season with pepper and bake at 325F for 25 minutes.

    Let cool and then chop.

    Place in a serving bowl with the pecans and ginger.

    In a separate bowl, combine the mayonnaise, buttermilk, pepper, salt (if using), and Italian style seasoning

    Pour over the chicken mixture and stir to coat.
