- 1 gal. chopped unpeeled peaches (1/2 basket)
- 1 c. vinegar
- 3 1/2 c. sugar
Directions

1Slice green tomatoes thick.

2Place slices in jars.

3Put 1 teaspoon salt in each quart jar or 1/2 teaspoon for pints.

4Cover with cold water to 1/2 inch of the top and seal.

5Boil in hot water bath for 20 minutes.

6When ready to use, drain, dip each piece in flour and fry in skillet of hot shortening or oil.

7Turn once.
