- 4 ducks
- 1 c. bacon fat
- 1 bunch green onions, chopped
- 2 stalks celery, chopped
- 2 bell peppers, chopped
- 1 can chicken broth
- 1 c. cooking sherry
- 1 can mushrooms
- Creole seasoning
Directions

1Season ducks with Creole seasoning inside and out.

2Fill cavity of ducks with mixture of green onions, celery and bell peppers.

3Brown ducks in fat, then add chicken broth and cooking sherry.

4Cook until tender, debone ducks and add mushrooms.

5Serve over rice.
