Ingredients
- 12 pieces bacon
- 2 to 3 ducks
- 3 bay leaves
- 3 cloves minced garlic
- 1/2 tsp. cayenne red pepper
- 3 Tbsp. Worcestershire
- 1 can stewed tomatoes
- 1 pkg. okra
- 1 lb. Polish sausage
- 1 lb. peeled shrimp
- 2 onions, chopped
- 1 bell pepper, chopped
- 6 stalks celery, chopped
- flour
- salt
- pepper
Directions

1Boil 2 or 3 ducks, covered with water, salt and bay leaves until ducks are tender (save stock).

2Fry bacon (save drippings). Add flour to drippings, enough to consume liquid.

3Heat and stir until brown.

4Add onions, celery and green pepper; cook until tender.

5Add to duck juice with tomatoes, okra, sausage, duck and a dash of thyme, basil and oregano (optional), if desired.

6Add shrimp last 8 minutes.

7Cook approximately 30 minutes.

8Serve over cooked rice.
