  • 1/4 cup sesame seeds
  • 2 tablespoons chickpea (garbanzo bean) flour (optional)
  • 2 tablespoons blanched hazelnuts (without skins)
  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black peppercorns

Directions

    Place first 5 ingredients in a large skillet over medium heat; cook 4 minutes or until fragrant and toasted, shaking pan frequently.

    Pour spice mixture onto a plate; cool 5 minutes. Place mixture in a spice or coffee grinder (or in a mortar and pestle); add remaining ingredients. Process or grind until coarsely ground. Spread in a shallow bowl.
