- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 1 small lemon, zested
- 2 1/2 pounds Dungeness crabmeat
- 1/2 cup creme fraiche
- 1 cup heavy cream
- 1 1/2 teaspoons fresh thyme leaves
- 1/2 teaspoon crushed red pepper
- Salt and black pepper
- 8 ounces grated white Cheddar
- Crackers or toast
Directions

1Preheat oven to 400°F. Heat oil in a medium saucepan over low; add onion, and saute until transparent, 4 to 5 minutes.

2Combine onion, lemon zest, crabmeat, creme fraiche, cream, thyme, red pepper, salt, and black pepper. Pour mixture into a gratin dish, and top with cheese. Bake until top is brown and bubbling, 30 to 40 minutes. Serve with crackers or toast.
