Ingredients
- 1 (7.6 ounce) package dry potato flakes
- 2 stalks celery, chopped
- 2 medium yellow onions, chopped
- 3 eggs
- 8 slices bread, toasted
- 1/2 cup butter
- salt and pepper to taste
Directions

1Preheat the oven to 350 degrees F (175 degrees C).

2Prepare mashed potatoes according to package directions.

3Set aside.

4Melt butter in a large skillet over medium heat.

5Add onion and celery, and cook, stirring until tender.

6Stir celery and onion into the mashed potatoes, then mix in the eggs.

7Break the toasted bread into small pieces, and stir into the potatoes.

8Season with salt and pepper, and transfer to an 11x7 inch baking dish.

9Bake for 45 minutes in the preheated oven, until heated through, and the top is golden.

10More butter, salt and pepper may be sprinkled over the top if desired.
