Dutch Toasts

Ingredients

  • 1 small sweet pickle
  • 2 small tomatoes
  • 1 c. chopped, cooked chicken (can substitute canned tuna or salmon in place of chicken)
  • 1 Tbsp. chopped parsley
  • 1 Tbsp. oil
  • 2 tsp. capers
  • 1/2 c. mayonnaise
  • 4 slices bread
  • 1/2 cucumber
  • 4 slices Gouda cheese

Directions

    Finely chop the pickle.

    Put the tomatoes into boiling water for 30 to 45 seconds.

    Peel and cut into thick slices.

    Mix chicken with pickle, parsley, oil, capers and mayonnaise.

    Toast slices of bread.

    Cover with tomato slices and then spoon on the chicken mixture.

    Slice the cucumber very thinly and arrange on the chicken mixture.

    Cover with a slice of cheese and place under a broiler until cheese melts.
