- 1 cup arborio rice
- 1/4 cup wine
- 3 cups (or more) chicken broth
- 1 cup corn (fresh or frozen)
- 2 tblsp olive oil
- 1 lb. shrimp, cleaned
- 1/4 c. chopped parsley
Directions

1sautee shallots in butter

2add rice and stir

3add wine, reduce

4add broth, heated, a little at a time for ten minutes

5add corn and the rest of the broth, stirring

6In a separate pan, heat oil and stir fry shrimp on high heat until cooked almost through
