- 8 medium to large potatoes
- 1 bay leaf
- 1 stick butter or margarine
- 1 can cream of chicken soup
- 1 1/2 c. sour cream
- 1 1/2 c. grated Cheddar cheese or cheese of your choice
- 1/4 c. chopped onion
- 1/2 to 1 c. crushed cornflakes
Directions

1Cook potatoes in jacket with bay leaf.

2Cool completely.

3Peel and grate.

4Melt butter and add to can of cream of chicken soup. Mix until smooth.

5Add sour cream, 1 cup grated cheese (reserve 1/2 cup), onion and salt and pepper to taste.

6Place in a buttered 9 x 13-inch pan and bake at 350° for 30 minutes.

7The last 15 minutes, top with 1/2 cup crushed cornflakes and 1/2 cup grated cheese.
