Ingredients
- 1 c. long-grain white rice
- 2 tbsp. vegetable oil
- 1 medium onion
- 2 clove garlic
- Coarse salt
- ground pepper
- 1 tbsp. curry powder
- 1 tsp. ground ginger
- 3 c. homemade or best-quality store-bought tomato sauce
- 2 can chickpeas
- 1 tbsp. fresh lime juice
- 1/2 c. plain low-fat yogurt
Directions

1Cook rice according to package instructions; cover, and keep warm.

2While rice is cooking, heat oil over medium heat in a large skillet.

3Add onion and garlic; season with salt and pepper.

4Cook, stirring frequently, until onion is tender, 4 to 6 minutes.

5Add curry powder and ginger; cook, stirring, until fragrant, about 1 minute.

6Add tomato sauce, chickpeas, and 1 1/2 cups water.

7Bring to a boil; reduce to a simmer, and cook, stirring occasionally, until thickened, 8 to 10 minutes.

8Stir in lime juice; season with salt and pepper.

9Serve stew with rice and yogurt, garnished with lime wedges and a pinch of curry.
