  • 1 Apple
  • 3 Eggs
  • 90 grams Sugar
  • 70 ml Olive oil
  • 140 grams Cake flour
  • 1 tsp Baking powder (optional)
  • 1 dash Powdered sugar (optional)

Directions

    Sift together the ingredients 2-3 times.

    Line your pan with a baking sheet.

    Preheat the oven to 170C.

    Crack an egg open into a large bowl.

    Add the sugar in thirds, whisking until pale and thick.

    Add the olive oil a little at a time while mixing.

    Add the sifted ingredients and fold in until there are no flour streaks.

    Cut the apples into 1-2 cm chunks and add to the batter.

    Using a a spatula, quickly fold the apples into the batter.

    Pour the batter into the pan and bake at 170C for 35 minutes.

    While baking, if it looks as though the top is browning too fast, cover with aluminum foil.

    Remove from the pan once cooled.

    Dust with powdered sugar.
