Easy Bake Enchiladas

- 1 large onion
- 1 jar Pace picante sauce
- 1 can enchilada sauce
- 1 1/2 lb. hamburger
- 2 c. shredded Cheddar cheese
- 1 can chopped black olives
- 16 oz. sour cream
- 1 can refried beans
- 1 pkg. 10 count large flour tortillas
Directions

1Mix picante sauce and enchilada sauce together and set aside. Brown hamburger with onions and drain.

2Add beans to hamburger. Spray a 9 x 13-inch pan with Pam spray.

3Spoon just 2 to 3 tablespoons of picante/enchilada sauce in pan.

4Take tortilla shells and fill with hamburger and bean mixture, about 1/2 cup. Roll tortillas and place into pan lengthwise next to each other. Pour picante sauce mixture over tortillas covering all of them. Top with sour cream, Cheddar cheese and black olives.

5Bake at 325° for 20 to 25 minutes until cheese is melted.

6Serves easily 10 to 12 people.

7Great served with nacho chips on the side (or on top).
