  • 4 oz. fresh or frozen cod fillet (thawed, if frozen)
  • 1 Tbsp. extra virgin olive oil
  • 2 tsp. lemon juice
  • 1 cup frozen mixed vegetables
  • 1 cup rotini pasta, uncooked
  • 2 Tbsp. balsamic vinegar
  • 2 cups fresh chopped spinach leaves
  • 1 medium orange
  • 8 fl oz (1 cup) drinking water

Directions

    Preheat oven to 350F.

    Place a sheet of foil in the center of a baking sheet; place cod on foil.

    Rub olive oil and lemon juice into cod; top with vegetables.

    Wrap foil tightly and place in oven for 20 min.

    Cook pasta according to package instructions.

    Sprinkle vinegar over spinach leaves; season if desired.
