Ingredients
- 4 oz. fresh or frozen cod fillet (thawed, if frozen)
- 1 Tbsp. extra virgin olive oil
- 2 tsp. lemon juice
- 1 cup frozen mixed vegetables
- 1 cup rotini pasta, uncooked
- 2 Tbsp. balsamic vinegar
- 2 cups fresh chopped spinach leaves
- 1 medium orange
- 8 fl oz (1 cup) drinking water
Directions

1Preheat oven to 350F.

2Place a sheet of foil in the center of a baking sheet; place cod on foil.

3Rub olive oil and lemon juice into cod; top with vegetables.

4Wrap foil tightly and place in oven for 20 min.

5Cook pasta according to package instructions.

6Sprinkle vinegar over spinach leaves; season if desired.
