- 1 (1 to 1 1/2 lb.) smoked sausage link, sliced thin (mild or hot, your choice)
- 1 c. chopped chicken meat (2 small cans work well)
- 1 pouch Cajun rice mix
- 1 (16 oz.) can stewed tomatoes
- 1 large bell pepper, chopped
- 1 large onion, chopped
- 1/2 c. water
Directions

1Saute sausage in regular or electric skillet.

2Do not drain grease.

3Add chicken (do not drain water) and other ingredients while stirring.

4Bring to a boil, then cover and let simmer 10 to 12 minutes or until liquid is absorbed.

5Remove from heat; stir. Let stand 5 minutes before serving.

6Serves 6 to 8.
