- 4 Roma Tomatoes
- 1 large Red Onion
- 1 tbsp Lime Zest
- 1 1/2 cup Cilantro
- 1 tbsp Ground Cumin
- 3 tbsp Lime Juice
- 1 1/2 tsp Kosher Salt
- 1 1/4 cup Extra Virgin Olive Oil
- 1 large Can of Black Beans, Drained
Directions

1Drain and set aside the black beans.

2Chop red onions, tomatoes, and cilantro into small pieces.

3In a blender add the zest of the lime, juice of the lime, cumin, salt, and olive oil, blend for approximately 2 minutes.

4Now combine black beans, tomatoes, onions, and cilantro all together mixing in the mixture from the blender.

5Let salsa stand 20 minutes then serve with tortilla chips.
