Directions

1Peel potatoes and chop into cubes. Fry in a skillet with olive oil until nicely browned.

2Make 4 wells in the fried potatoes and put an egg in each one. Sprinkle salt and pepper over everything. Cover skillet with a lid and cook eggs for about 5 minutes.

3In last minute of cooking time, add cheese and green onions and more salt and pepper if needed.
