Easy Butterscotch Squares

  • 1/2 c. butter
  • 2 c. brown sugar (1/2 light, 1/2 dark)
  • 2 eggs
  • 1 1/2 c. sifted unbleached flour
  • 2 tsp. baking powder
  • 2 tsp. vanilla
  • 1 c. chopped nuts (pecans or English walnuts)
  • confectioners sugar

Directions

    In a medium saucepan, melt the butter, then add sugar, blending well.

    Set aside to cool.

    Add eggs, one at a time, beating after each.

    Blend flour and baking powder together, then add to mix.

    Add vanilla and nuts, making sure to blend thoroughly.

    Spread batter into a greased and floured 9 x 13-inch pan; bake at 350° for approximately 30 minutes.

    Check with cake tester to be sure it is completely baked.

    While still warm, cut into squares and dust with confectioners sugar.
