Easy Chicken Divan

Ingredients

  • 1 (3 1/2 to 4 lb.) broiler-fryer, cut in half
  • 2 (10 oz.) pkg. frozen broccoli spears, thawed and coarsely chopped
  • 2 (10 3/4 oz.) cans cream of chicken mushroom soup (undiluted)
  • 1 c. mayonnaise
  • 1 1/2 tsp. lemon juice
  • 3/4 tsp. curry powder
  • 1/2 c. (2 oz.) shredded sharp Cheddar cheese
  • 3/4 c. herb-seasoned stuffing mix

Directions

    Combine chicken and enough water to cover in a Dutch oven; bring to a boil.

    Cover; reduce heat and simmer 40 minutes or until tender.

    Remove chicken, reserving broth for other uses. Cool chicken.

    Skin, bone and cut chicken into bite size pieces. Set aside.

    Place broccoli in lightly greased 11 x 7 x 1 1/2-inch baking dish.

    Top with chicken.

    Combine soup and next 3 ingredients; pour over chicken.

    Sprinkle with cheese and stuffing mix.

    Bake at 400° for 25 to 30 minutes.
