Easy Cornmeal Muffins

  • 1/4 c. butter
  • 1/2 c. sugar
  • 2 c. flour
  • 1 c. cornmeal
  • 4 tsp. baking powder
  • 3/4 tsp. salt
  • 2 eggs
  • 1 c. milk

Directions

    Cream butter and sugar in bowl. Sift flour, cornmeal, baking powder and salt together. Beat eggs until lemon colored and thick. Stir in milk. Add to creamed mixture alternately with cornmeal mixture. Beat thoroughly.

    Place in muffin tins lined with baking cups.

    Bake in preheated 400° oven for 20 minutes or until done. Yields 12 muffins.
