Easy Crawfish Pie

- 1 stick butter
- 1 large bell pepper
- 1 garlic pod
- 2 lb. crawfish (with fat)
- 1 can cream of mushroom soup
- 2 frozen 9-inch pie shells
- 1 c. shallots
- 1 large onion
- several stalks celery
- 1 can cream of celery soup
- 2 c. rice, cooked
Directions

1Saute garlic, celery, onion and bell pepper in butter.

2Pour in cream of celery soup and half of the cream of mushroom soup. Do not add water.

3Add crawfish (and fat) and cook on high heat for 20 minutes. Remove from heat. Add shallots and enough rice to thicken.

4Heap into 1 pie shell.

5Place second pie shell on top and crimp edges. Bake at 350° until golden brown.
