Easy Egg Casserole

Ingredients

  • 1 lb. bulk pork sausage
  • 1 small onion
  • 3/4 lb. sliced mushrooms
  • 1 loaf thinly sliced firm bread
  • butter
  • 3/4 lb. finely chopped ham or fried, crumbled bacon
  • 3/4 lb. shredded, sharp, Cheddar cheese
  • 1 lb. Mozzarella cheese
  • 8 eggs
  • 1/4 to 1/2 c. milk

    Brown and partially drain sausage.

    Saute onion and mushrooms in remaining fat; drain.

    Remove crusts from bread; butter slices and arrange one layer, buttered side down, in a 9 x 13-inch baking pan.

    Top with ham or bacon and cover with Cheddar cheese.

    Add another layer of buttered bread and top with sausage, mushrooms and onions.

    Cover with Mozzarella cheese.

    Beat eggs and milk and pour over layers in pan.

    Cover and refrigerate overnight.

    Bake, uncovered, at 325° for 45 minutes or until set.
