Easy Egg Fried Rice

- 1 cup frozen peas and carrots
- 1 1/2 cup white rice (precooked)
- 1 soy sauce
- 3 eggs
- 3 tbsp vegetable oil (divided)
Directions

1Steam frozen peas and carrots until tender.

2In separate pan, heat 2 tbsp of oil over medium high heat.

3Scoop precooked white rice into pan.

4Stir for 2-3 minutes.

5Add peas and carrots to rice.

6Then drizzle soy sauce over to taste.

7Stir.

8In a small pan, heat tbsp of oil and pour eggs into pan.

9Allow to cook almost all the way through and flip.
-
10(No worries if the egg breaks, it's all the same).

11Remove from pan once cooked and cut egg into pieces.

12Mix into rice.
