- 1 large eggplant, peeled
- 1/2 stick melted margarine
- seasoned Italian bread crumbs
- about 16 oz. spaghetti sauce
- 8 oz. sliced Mozzarella cheese
- oregano
Directions

1Slice eggplant into 1/3 to 1/2-inch thick slices (cut crosswise).

2Dip slices in margarine and then bread crumbs. Sprinkle slices with oregano if desired.

3Spoon spaghetti sauce on top of each slice.

4Top eggplant with a slice of cheese.

5Place eggplant in a 400° oven for about 15 to 20 minutes or until cheese is slightly brown.
