- 1 cup lentils
- 2 cups water
- 1 potato, peeled and cubed
- 1 red bell pepper, chopped
- 1 onion, chopped
- 2 tablespoons minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onion
Directions

1Combine lentils and water in a saucepan over medium heat; bring to a boil and cook about 20 minutes.

2Stir potato, red bell pepper, onion, garlic, salt, and pepper into the lentils; continue cooking until the potato and lentils are tender and cooked through, about 15 minutes more. Garnish with cilantro and green onion to serve.
